Maple Ice Cream with Candied Bacon

My talented and lovely ice cream guru husband made this tonight, so yummy!

Candied Bacon

5 strips bacon
about 2 teaspoons light brown sugar
1. To candy the bacon, preheat the oven to 400F (200C).

2. Lay the strips of bacon on a baking sheet lined with a silicone mat or aluminum foil, shiny side down.

3. Sprinkle 1½-2 teaspoons of brown sugar evenly over each strip of bacon, depending on length.

4. Bake for 12-16 minutes. Midway during baking, flip the bacon strips over and drag them through the dark, syrupy liquid that's collected on the baking sheet. Continue to bake until as dark as mahogany. Remove from oven and cool the strips on a wire rack.

5. Once crisp and cool, chop into little pieces, about the size of grains of rice.
(Bacon bits can be stored in an airtight container and chilled for a day or so, or stored in the freezer a few weeks ahead.)


Maple Ice Cream

1.5 cups of the best maple syrup you can afford
6 egg yolks
1/4 teaspoon salt
2.5 cups of cream
1.75 cups of milk
candied bacon pieces

  1. Cook the maple syrup down to 1/2 its volume about 3/4 of a cup. This stuff tends to boil over so take it slow and low. Check it frequently and do your best to keep it away from a full boil.
  2. In a medium saucepan, combine milk, cream, and syrup reduction. Stir to dissolve the maple syrup reduction. Bring to a bare simmer. Depending on the temperature when it is added, you may find that the syrup reduction solidifies. Do not fear. When you get above 160 degrees F, it will easily mix into the liquid.
  3. While the milk and cream are heating, mix the yolks with the salt. Beat well.
  4. Temper the eggs with the dairy mixture by slowly adding about 1/3 of the liquid(in two or three additions). Remember to whisk constantly during the tempering process. Add the eggs mixture to the remaining milk mixture. Stir constantly until the the temperature reaches 175F.
  5. Cool in fridge overnight. Churn in your ice cream maker for 30 minutes, adding candied bacon at end.
